Move over Matcha Latte! The latest trend is the Matcha Affogato, and we are already big fans. The combination of matcha and vanilla works exceptionally well, which is not surprising since vanilla is often added to matcha lattes. I vividly remember tasting various matchas side by side during my tea sommelier training to test their quality. What struck me was that in a good matcha, chocolate notes come to the forefront. Now, the combination with white chocolate also works remarkably well. From this combination, this recipe was created.

Ingredients for Matcha Affogato
- 2 grams of matcha powder
- 80 ml water
- 1 large scoop of vanilla ice cream
- A half handful of white chocolate shavings
Recipe for Matcha Affogato
Start by making your matcha, and we do that, of course, according to the rules of the art. Use a matcha bowl or chawan and ideally sift your matcha through a small sieve. Add a little water (heated to a maximum of 80 degrees) and whisk it with your matcha whisk or chasen into a paste. Add the rest of the water and continue whisking until it becomes a little foamy – maximum 45 seconds.
Put a scoop of vanilla ice cream in a glass and pour the matcha over it. Sprinkle with the white chocolate shavings and serve immediately.
*Since you are not drinking the matcha pure here, you can use a “regular” culinary matcha instead of the ceremonial grade.
