Description
Yellow tea is considered one of the more unique teas due to its special production process. After the so-called “pan-firing,” where the tea is lightly roasted to deactivate the enzymes responsible for fermentation, the tea is covered, resulting in the formation of more complex polyphenols: theaflavins.
This results in a gentle flavor reminiscent of green tea, with hints of, for example, Lung Ching. A truly unique tea!
