Instructions
For every cup of tapioca pearls, you’ll need 10 cups of water. Bring the water to a boil in a large pot. Slowly add the tapioca pearls and stir gently. Wait for the pearls to float to the surface, then cover the pot with a lid. Let them simmer for 2 to 3 minutes over medium heat. The longer they cook, the softer they will become. Turn off the heat and let the pearls steep for an additional 2 to 3 minutes. Remove the tapioca pearls from the water and place them in cold water for about 20 seconds. Then transfer the pearls to a dry bowl and add sugar or honey to taste. You can also add sugar or honey to the boiling water so it can better infuse into the pearls. Use the pearls within 4 hours.
